Barbecued Salmon with Pesto & Delicious Pair Ups

Salmon with Pesto
Ingredients:
- 4.5 oz Fillet of Salmon
- 1 Tsp Lemon Pepper
- ¼ Bunch of Basil
- 1 Sprig of Thyme
- 1 Sprig of Parsley
- 2 Cloves of Garlic
- 1 Lemon – Juice and Zest
- 1 Tbsp Parmesan Cheese
- Salt & Pepper to taste
- Olive Oil
- 1 Tbsp Soy Sauce
- 1 Tbsp Brown Sugar
Directions:
Pesto
- Combine herbs, garlic, and lemon in a food processor.
- Blend with olive oil until a silky consistency.
- Add salt and pepper to taste.
Salmon
- Marinate salmon in brown sugar and soy sauce overnight,
- Season salmon fillets with lemon pepper and salt.
- Preheat grill to medium heat.
- Grill salmon for 6-8 minutes per side.
- Top with pesto.
Curried Quinoa
Ingredients:
- 1 Small Onion diced
- 2 Cloves Garlic minced
- 1 Small Pepper diced
- 2 Cups Quinoa
- 1 Tbsp Curry Powder
- 1 Tsp Garam Masala
- 1 Pinch of Cinnamon
- 1 Lemon juiced
- Salt & Pepper to taste
Directions:
- In a saute pan toast the curry spices.
- Add 2 cups of chicken stock and lemon juice to the spice mix.
- In a separate pan caramelize the onions, garlic, and peppers.
- Add the quinoa to vegetables and toast the grains for 3-4 minutes.
- Add the chicken stock mixture to the grains.
- Bring the mixture to a boil then reduce to a simmer.
- Cover and cook for 25 minutes.
Grilled Asparagus
Ingredients:
- 10 stalks of Asparagus
- 1 tsp garlic powder
- 1 tbsp Olive Oil
- Salt and Pepper to taste
Directions:
- Preheat grill to medium-high heat.
- Coat the asparagus with olive oil.
- Season with salt, pepper, and garlic.
- Grill for 4 – 5 minutes.
Roasted Parmesan Thyme Tomatoes
Ingredients:
- 4 Roma Tomatoes
- 2 Sprigs of Thymen minced
- ½ Cup of Parmesan Cheese
- 1 Tsp Olive Oil
- Salt and Pepper to taste
- Preheat the oven to 375° F.
- Top each tomato with parmesan cheese, thyme, and olive oil.
- Roast on a baking sheet for 8 minutes.
